Carrot and Coriander Soup Recipe

Ingredients:

  • 1 lb (450g) carrots, peeled and chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 potato, peeled and diced (optional, for thickness)
  • 4 cups (1 liter) vegetable or chicken broth
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric (optional, for color)
  • 1/2 cup fresh coriander leaves (cilantro), chopped
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • 1/2 cup heavy cream or coconut milk (optional, for creaminess)
  • Squeeze of fresh lemon juice (optional)

Instructions:

  1. In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 1 minute until fragrant.
  2. Add the chopped carrots and diced potato to the pot. Sprinkle in the ground coriander, ground cumin, and turmeric (if using). Stir well to coat the vegetables with the spices and sauté for a few minutes.
  3. Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot and let the soup simmer for about 15-20 minutes, or until the carrots and potatoes are tender.
  4. Once the vegetables are cooked, use an immersion blender or regular blender to carefully puree the soup until smooth. If using a regular blender, work in batches and allow the soup to cool slightly before blending. Be cautious, as hot liquids can cause splattering.
  5. Return the blended soup to the pot (if necessary) and place it back on the stove over low heat. Stir in the chopped fresh coriander (cilantro). If using heavy cream or coconut milk, add it at this point to achieve a creamier consistency. Allow the soup to heat through, but do not let it boil.
  6. Season the soup with salt and pepper to taste. If desired, add a squeeze of fresh lemon juice to brighten the flavors.
  7. Once the soup is heated and seasoned to your liking, remove it from the heat.
  8. Serve the carrot and coriander soup hot, garnished with additional chopped fresh coriander leaves. You can also drizzle a bit of cream or coconut milk on top for presentation.
