Moroccan Grilled Beef Skewers:

Ingredients:

  • 1 pound (450g) beef sirloin or tenderloin, cut into 1-inch cubes
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Wooden skewers, soaked in water for 30 minutes (metal skewers optional)

Instructions:

  1. In a bowl, combine the minced garlic, cumin, coriander, paprika, cinnamon, turmeric, salt, pepper, olive oil, and lemon juice to create the marinade.
  2. Thread the beef cubes onto the soaked wooden skewers.
  3. Coat the beef skewers with the marinade, ensuring they are evenly covered. Marinate for at least 1 hour, or overnight in the refrigerator for better flavor.
  4. Preheat the grill to medium-high heat.
  5. Grill the skewers for about 3-4 minutes on each side, or until they reach your desired level of doneness.

Couscous:

Ingredients:

Instructions:

  1. In a saucepan, bring the broth and olive oil to a boil.
  2. Stir in the couscous and a pinch of salt. Remove from heat, cover with a lid, and let it sit for about 5 minutes.
  3. Fluff the couscous with a fork to separate the grains. If desired, mix in chopped fresh herbs before serving.

Moroccan Salad:

Ingredients:

  • 2 large tomatoes, diced
  • 1 cucumber, diced
  • 1 red onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the diced tomatoes, cucumber, red onion, bell pepper, parsley, and mint.
  2. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.
