Instructions:

  1. Heat a large skillet or pot over medium heat. Add a drizzle of olive oil and sauté the chopped onion, carrot, and celery until softened about 5 minutes.
  2. Push the vegetables to the side of the skillet and add the minced garlic. Sauté for about 30 seconds until fragrant.
  3. Add the ground meat to the skillet. Break it up with a wooden spoon and cook until browned.
  4. Stir in the tomato paste, dried oregano, basil, thyme, bay leaf, salt, and pepper. Cook for a couple of minutes to let the flavors meld.
  5. If using red wine, pour it into the skillet and let it simmer for a few minutes until it’s mostly reduced.
  6. Add crushed tomatoes, cherry tomatoes, and beef or vegetable broth to the skillet. Stir to combine everything well.
  7. Bring the sauce to a simmer, then lower the heat and let it gently simmer for at least 30 minutes. The longer it simmers, the richer the flavors will become. Remember to stir occasionally.
  8. While the sauce is simmering, bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente. Drain the pasta.
  9. Once the sauce is ready, taste and adjust the seasoning if needed. Remove the bay leaf.
  10. Serve the Bolognese sauce over the cooked spaghetti. Sprinkle with grated Parmesan cheese and chopped fresh basil or parsley.
